This afternoon I made these carrot and sultana scones from the May Waitrose recipe card. I only picked up the card last week but thought they sounded yummy and this afternoon, to keep out of the heat of the early afternoon sun, they went in the oven.
I made a couple of changes to the recipe: I used half wholemeal and half white plain flour, I used dextrose instead of caster sugar, and I followed the ‘tip’ of adding the zest of half an orange, only I used a whole clementine.
They are really delicious straight from the oven with a bit of butter – our son and I sat in the garden munching away on one! The clementine comes through quite strong, but all the flavours are lovely together.
