Sausage and chestnut pasta

Last October we chaperoned some friends on holiday to Italy (they got married a couple of weeks ago!). We had a great time and it was lovely that they babysat our son twice so that we could go out for dinner together. If you have kids, you’ll know how wonderful this is!

The second time we went out, hubby had the restaurant’s special of sausage and chestnut pasta which was delicious, so when we got home I tried to replicate the dish. Now that we’re in chestnut season I recently made it for the first time in a while. I’m pretty sure there will be a recipe online somewhere for it but I decided to just have a go. It’s probably nothing like the original dish, but here’s my recipe:

Sausage & Chestnut Pasta
Serves 2

4 sausages, deskinned & chopped
100g whole cooked chestnuts, chopped (I use Merchant Gourmet Whole Chestnuts which come in a 200g box and the chestnuts are vacuum packed)
1 clove of garlic, crushed
2 tablespoons tomato puree
Oregano/mixed herbs
Black pepper

Pasta (as much as you like!)

Cook pasta. Meanwhile, fry sausage pieces in a frying pan with a small amount olive oil. Add the chestnuts and garlic when the sausages are cooked through. Add tomato puree, herbs and seasoning. Drain pasta and stir into sausage mix. Serve.

This makes a nice meal but it is probably missing some wine, tomatoes, or other herbs like fennel (yuck). We use up the leftover chestnuts in vegetable stir fry.
