I made way too much apple sauce for our roast pork on Sunday. But thanks to Sainsbury’s “everyday easy” magazine (free instore now) I was able to be thrifty by using up the leftover apple sauce in apple cupcakes! The recipe below was tucked away in the magazine in a section called Waste Not Want Not, or using up the jars of condiments you never use such as tartare, mint and horseradish sauces. It is also helpful if you’ve made it yourself instead of using it from a jar, and have made too much!
150g unsalted butter
115g caster sugar
1tsp almond extract
2 medium eggs
140g self-raising flour
100g apple sauce
Preheat oven to 180C, fan 160C, gas 4. Place 12 cupcake cases into a 12-hole cupcake tray.
Cream the butter and sugar in a large bowl until light & fluffy, then add almond extract, eggs and 1 tbsp of flour. Beat until combined and add the rest of the flour and sultanas, then beat until combined.
Fill the cases halfway with the mixture. Add 1 tsp of the apple sauce into each case and top with the remaining mixture. Bake 20-25 minutes until risen and golden.
